Salmon Patties

I am currently expecting and cannot diet, but as soon as this sweet bean pops out, it’s back to diet and exercise for this family! So each week I will be calculating each meal for both calories and cost.  That way, when the time comes, calorie counting should be a cinch!

Ok, I don’t eat salmon, so I have no idea what these taste like!  My husband doesn’t complain, but also doesn’t rave over this recipe, so I would definitely suggest adapting it to your taste.

 

Ingredients:

  • 1 7.1 oz pkg Chicken of the Sea Pink Salmon
  • 1 large egg, lightly beaten
  • 1/2 cup bread crumbs or crushed saltines
  • 2 tbsp oil or butter

Directions:

 

In a skillet, heat oil or melt butter over medium heat.  Meanwhile, mix together first 3 ingredients.  Form into patties and place in skillet.  Brown on both sides for 7-8 minutes.

Check the expiration dates on packages like pancakes and cake mixes that have yeast which over time develop spores. Apparently, the mold that forms in old mixes can be toxic! Throw away ALL OUTDATED  pancake mix, brownie mixes, Bisquick, cake & cookie mixes, etc., you have in your home.

Chicken Enchiladas

Ingredients:

  • 2 lbs cooked shredded chicken
  • Tortilla shells
  • 1/4 c butter or margarine
  • 1 tbsp minced garlic
  • 2 cups shredded cheddar

Directions:

 

In a skillet, melt butter and saute garlic.  Add shredded chicken.  Simmer for 5-10 minutes.  Add 1 spoonful of chicken to tortilla.  Sprinkle with cheese.  Roll up and place in a casserole dish.  Repeat.  Sprinkle with cheese. Bake at 350 for about 15 minutes.

Ingredients:

  • 2 lbs ground beef
  • Worcestire sauce
  • Onion Powder
  • 8 buns

Directions:

 

Mix meat and half a bottle of worcestire sauce in a mixing bowl.  Sprinkle generously with onion powder.  Mix well with hands.  Form into tightly formed balls and then make into patties.  Grill or bake on 350 for about 15 minutes on each side.

Marinated Tenderloin

Ingredients:

  • Tenderloin
  • Allegra Marinade

Directions:

 

Place tenderloin in a Ziploc bag.  Poor 1/2 bottle of Allegra into bag.  Let marinade at least 4 hours, but preferably over night.  Slice tenderloin, grill for 15-20 minutes on each side.

Smothered Pork Chops

Ingredients:

  • 4 butterfly pork chops
  • salt and pepper, to taste
  • 4 tbsp BBQ Sauce
  • 5 strips of bacon
  • 2 cups shredded cheese

Directions:

 

Salt and pepper pork chops.  Place in a greased casserole.  Bake at 350 for about 20 minutes on each side.  Meanwhile, cook bacon and cool.  Brush pork  chops with BBQ sauce.  Sprinkle with crumbled bacon and shredded cheese.

Manicotti

Ingredients:

  • 1 (12-ounce) package manicotti pasta shells (or 14 manicotti shells)
  • 1 (15-ounce) carton part-skim milk ricotta cheese ‘
  • 16 ounces part-skim milk mozzarella cheese, grated
  • 1/2 cup freshly grated Parmesan cheese
  • 1 large egg, beaten
  • 1 (26-ounce) jar Ragu meat sauce

Directions:

 

Boil manicotti shells.  Meanwhile, mix together cheeses and egg. Set aside. Brown meat. Drain.  Add spaghetti sauce. Drain the manicotti shells and run under cold water until cool.  In a 9 x 13 casserole, spread 1/3 of the sauce mix.  Stuff the shells with the cheese mix, place in 9 x 13.  Top with remaining sauce.  Bake at 350 for 30 minutes.  Sprinkle with parmesan.

Homemade BBQ Sandwiches

Ingredients:

  • 4 lb pork roast
  • 2 cups water
  • 16 oz bottle of Sweet Baby Ray’s BBQ sauce
  • onion powder
  • salt and pepper

Directions:

 

Place roast in slow cooker.  Season with salt, pepper, and onion powder.  Add 2 cups of water and BBQ sauce.  Cover and cook on low 8 to 12 hours.

Spaghetti

My Son’s all-time favorite! Better than ice cream to him!  This is simply basic spaghetti and the calorie count.

Spaghetti

Ingredients:

1 Jar Ragu Spaghetti Sauce
1 lb ground beef
1/2 box Spaghetti Noodles

Directions:

Brown meat.  Drain.  Add spaghetti sauce.  Simmer while noodles boil.  In a separate pan, boil water.  Add noodles and allow to boil for about 10 minutes or until soft.  Serve topped with parmesan cheese, if desired!
