Salmon Patties

I am currently expecting and cannot diet, but as soon as this sweet bean pops out, it’s back to diet and exercise for this family! So each week I will be calculating each meal for both calories and cost.  That way, when the time comes, calorie counting should be a cinch!

Ok, I don’t eat salmon, so I have no idea what these taste like!  My husband doesn’t complain, but also doesn’t rave over this recipe, so I would definitely suggest adapting it to your taste.

 

Ingredients:

  • 1 7.1 oz pkg Chicken of the Sea Pink Salmon
  • 1 large egg, lightly beaten
  • 1/2 cup bread crumbs or crushed saltines
  • 2 tbsp oil or butter

Directions:

 

In a skillet, heat oil or melt butter over medium heat.  Meanwhile, mix together first 3 ingredients.  Form into patties and place in skillet.  Brown on both sides for 7-8 minutes.
