I am currently expecting and cannot diet, but as soon as this sweet bean pops out, it’s back to diet and exercise for this family! So each week I will be calculating each meal for both calories and cost. That way, when the time comes, calorie counting should be a cinch!
Ingredients:
- 1 (12-ounce) package manicotti pasta shells (or 14 manicotti shells)
- 1 (15-ounce) carton part-skim milk ricotta cheese ‘
- 16 ounces part-skim milk mozzarella cheese, grated
- 1/2 cup freshly grated Parmesan cheese
- 1 large egg, beaten
- 1 (26-ounce) jar Ragu meat sauce
Directions:
Boil manicotti shells. Meanwhile, mix together cheeses and egg. Set aside. Brown meat. Drain. Add spaghetti sauce. Drain the manicotti shells and run under cold water until cool. In a 9 x 13 casserole, spread 1/3 of the sauce mix. Stuff the shells with the cheese mix, place in 9 x 13. Top with remaining sauce. Bake at 350 for 30 minutes. Sprinkle with parmesan.
