I am currently expecting and cannot diet, but as soon as this sweet bean pops out, it’s back to diet and exercise for this family! So each week I will be calculating each meal for both calories and cost. That way, when the time comes, calorie counting should be a cinch!
Chicken Quesadillas
I’m not sure that “quesadillas” is the right term, but that’s what we call them! I used to add salsa and sour cream into mine and make some plain ones for my picky husband, but one day I tried one of the plain ones and it was so good! So now I make them all plain and dip them in salsa and sour cream.
Ingredients:
1/3 | C | Butter or Margarine |
2 | tsp | Minced Garlic |
4 | Tortilla Wraps | |
3 | 10 oz cans | Cubed Chicken Breast |
1/2 | C | Shredded Cheese |
4 | Tbsp | Sour Cream |
4 | Tbsp | Salsa |
Directions:
In a skillet melt butter. Sautee garlic in butter. Drain and add chicken breast. Place 1/4 of chicken in tortilla wrap. Sprinkle with 1/4 of the cheese. Wrap and roll and place in a small casserole dish. Bake on about 350 for about 10 minutes. Serve with sour cream and salsa.
