Oven Fried Chicken

27 Apr

I am currently expecting and cannot diet, but as soon as this sweet bean pops out, it’s back to diet and exercise for this family! So each week I will be calculating each meal for both calories and cost.  That way, when the time comes, calorie counting should be a cinch!

My husband’s favorite even though I will never cook it quite like Mimi!

Oven Fried Chicken

Ingredients:

1/3 C I Can’t Believe it’s Not Butter
1 C Flour
4-6   Thinly sliced chicken breasts
    salt and pepper to taste

   Directions:
Place butter in an iron skillet.  Place the skillet in the oven and preheat to 375.  Meanwhile, coat chicken     breasts in flour. (I use a Ziploc bag.) Remove skillet from oven when preheated and place chicken in skillet.
Salt and pepper to taste.  Bake for 20 minutes on each side or until golden brown.
