 Remember when I said this?

Mommy Goals 2010:  Create a food journal. I already have a “menu plan” which is everything I cook. Due to a very picky husband, rarely does it change. I want to take each meal and create a calorie count and serving size for each. I am currently expecting and cannot diet, but as soon as this sweet bean pops out, it’s back to diet and exercise for this family!”

Time to get started on making a calorie counting chart!  So, here is the recipe, cost (varies), and calorie count for my favorite dish that I cook:  Chicken Parmesan.

Chicken Parmesan Recipe

Makes 4 servings

(Picture to Come)
 Ingredients
2 – 16 oz chicken breast, skinless, boneless
1/2 cup breadcrumbs
1/4 cup parmesan cheese, grated
1/4 cup italian dressing
cup prepared spaghetti sauce
1/2 cup shredded mozzarella cheese

Directions

Pour dressing onto a plate.  Combine breadcrumbs and parmesan on a seperate plate.  Slice the breasts thinly to make 4 breasts.  Dip each breast in the dressing and then in the bread crumb mixture.  Place in a greased 9 x 13.  Bake at 350* for approximately 25 minutes.  Lightly top each chicken breast with spaghetti sauce and sprinkle with cheese.  Place back into oven until cheese is melted.  Enjoy!
